I came into my marriage with one cookbook -old faithful - Betty Crocker. But I didn't have a clue how to cook on our meager budget in 1977 so mom brought me a little green paperback that became my "newlywed's food bible", How I Feed My Family on $16 a Week by Jo Ann York. It had shopping tips, how to make a menu, and recipes - I was in high cotton now! Thirty- nine years and six kids later I still use the recipes in that fallen apart old treasure and the menus that I made from it even if it does cost more than $16 a week. This Pork Chop Casserole recipe to this day is my hubby's favorite.<br />

Pork Chop Casserole<br />
<br />
4 pork chops<br />
3-4 potatoes, peeled and sliced<br />
2 apples, peeled and sliced<br />
2 Tablespoons brown sugar<br />
salt and pepper to taste<br />

Heat oven to 350 degrees. Grease a 13"x9" baking pan. Place pork chops in the bottom of the 13"x9" baking pan. ( I always added 1 cup water in the bottom of the pan - it makes some nice pan juices to use on the potatoes. Sometimes use apple juice.) Place the sliced potatoes and apples on top of the pork chops. (Occasionally I line the bottom of the pan with sliced onions.) Sprinkle with the brown sugar, salt and pepper. Cover with foil and bake in the oven for 40-45 minutes. I wanted a multi whole grain pancake mix to keep on hand for breakfast and quick meals. I found several online however, they didn't have enough variety in flours to suit me and most depended on its base with white flour. So going through the freezer I took out all my whole grain options that I had on hand and went to work. Below is the panckae mix I ended up with and it is yummy.<br />
<br />
1 cup whole wheat pastry flour<br />
1 cup oat flour<br />
1/2 cup unbleached all purpose flour<br />
1/2 cup rye flour<br />
1/2 cup cornmeal<br />
1/2 cup spelt flour<br />
2 Tablespoons sugar<br />
3 Tablespoons baking powder<br />
1 teaspoon salt<br />
<br />
Combine all the ingredients. Store in a labeled jar in a cool, dry place. <br />
<br />
To make the pancakes****<br />
<br />
1 cup multi-grain pancake mix<br />
1 egg<br />
1 cup milk or non dairy milk<br />
1 Tablespoon applesauce<br />
<br />
<br />
Mix all the ingredients in a large bow and whisk to mix well. Heat a nonstick griddle or skillet. Add cooking spray to the coat the griddle or pan. Once heated up add 1/4 cup of the pancake batter to the griddle. Once it bubbles turn the pancake over and cook for another minute. Done, add your favorite toppings and eat. This makes about 9-10 pancakes.<br />

Preheat oven to 400 degrees. Sift all dry ingredients in a large bowl, don't sift the almond meal, just add it to the bowl with the other dry ingredients. Cut in the butter. Add the yogurt mixture and stir to blend. Add the berries and gently mix in. on a floured surface dump the dough and knead into a soft flat rectangle. You will need to keep flour on your hands as you do this the dough will be sticky. Four the dough into 2- 3 inch balls. Place them on a parchment lined cookie sheets or biscuit pans and flatten slightly. Bake for 15 minutes. Remove to cooling racks. Serve cold or warm. <br />

Brrrr - things sure have turned chill here this past weekend, however I'm not going to complain. I've grown very tired of the hot humid weather that seem to have hung over us for so long. we are finally going to get to what Joseph has been waiting for in school a study of farming of sheep. Back in the late summer I purchased us some drop spindles and wool to use with this block and he has been dying to use them. He's been working on knitting - he already knows how to crochet. I' knitting him a Weasley sweater from Knitted Charms - hope to have it done by the end of December when cold weather really hits - maybe I'll get lucky and get it done for Christmas. His Monday baking will be making pumpkin spice cookies. Here's what will be on the dinner table this week.<br />

This is a variation of the Pumpkin Pasties recipe in The Unofficial Harry Potter Cookbook by Dinah Bucholz. If you ever get a chance to get your hands on this wonderful book - do so. It has some wonderful traditional English recipes that are delicious. These little hand pies are so simple to make that I had Joseph make them for our Monday baking to use for our afternoon snack.<br />
<br />
Pumpkin Pasties<br />
<br />
1 homemade pie crust or gluten free pie crust recipe<br />
1 cup pumpkin puree<br />
1/4 cup brown sugar<br />
1/8 teaspoon ground nutmeg<br />
1/8 teaspoon ground cinnamon<br />
1/8 teaspoon ground ginger<br />
3 Tablespoons almond milk<br />
colored sugar crystals of choice<br />
<br />
1. Combine the pumpkin puree, brown sugar, nutmeg, cinnamon, and ginger in a small bowl. Stir to mix well. Set aside.<br />
<br />
2. Make the pie crust. Roll out the pie crusts and cut into four-inch circles.<br />
<br />
3. Put 1 - 2 Tablespoons of the pumpkin filling into one side of the pastry circles. Then fold over and crimp the edges with a fork to seal it. Make a couple of slashes in the tops with a sharp knife to make vents.<br />
<br />
4. Brush the top of each with the milk and sprinkle with colored sugar of choice.<br />
<br />

The majority of them came from a little purple book named Clean & Green by Annie Berthold-Bond. My mother and I had a non-chemical house cleaning business in 1996 named Down To Earth and these are the mixtures we used then and I still use in my home.<br /><br /><br /><br />SUPPLIES~<br />White Vinegar<br />Baking Soda<br />Washing Soda<br />Borax<br />Non-petroleum liquid Soap (Tree of Life Dish Washing Soap works very well- I just buy a gallon jug)<br />Essential Oils; lemongrass, lavender, grapefruit, eucalyptus, tea tree, pine<br /><br /><br />CLEANING MIXTURES~<br /><br /><strong>All Purpose Spray Cleaner</strong><br />1 teaspoon washing soda<br />2 teaspoons borax<br />1/2 teaspoon non-petroleum liquid soap<br />2 cups hot water<br />1 teaspoon essential oil<br />spray bottle<br /><br />Combine the hot water borax and washing soda in a glass measuring cup and stir to dissolve. Let cool a bit. (the hot water can melt a plastic bottle) Add the liquid soap and essential oil, gently stir. Put in the spray bottle. Makes 2 cups<br /><br /><strong>Bathroom</strong> <strong>Scrubber</strong><br />1/2 cup baking soda<br />enough non-petroleum liquid soap to make a creamy mixture<br />1/2 teaspoon eucalyptus oil<br />10 drops lemongrass oil<br /><br />Combine the ingredients with a spoon, until the consistency of frosting. Scoop generous amounts onto a sponge or rag and use it to scrub the counter top, sink or tub. <br /><br /><br /><strong>Air Freshener</strong><br />2 cups water<br />1 teaspoon essential oil of choice<br />(this can be a mixture of 1/2 and 1/2 teaspoons of two different oils)<br /><br />Put the water in a spray bottle, add the essential oil. Put the top on and shake to blend the oil and water. Spray the room. Remember to shake this each time you use it. <br /><br /><br /><strong>Floor Cleaner</strong><br />(this can be used on wood, tile, and linoleum)<br /><br />1/2 cup non-petroleum liquid soap<br />1/4 cup white vinegar<br />20 drops grapefruit or lavender essential oil<br />2 gallons water<br /><br />Combine all ingredients in a large bucket. Use with a mop or sponge. This also works well on baseboards and cupboards. <br /><br /><br /><strong>Carpet Sprinkle</strong><br />1 box baking soda<br />1 box borax (simply fill the soda box with borax once it it empty)<br />40 drops of essential oil of choice<br /><br />Combine the baking soda and borax in a jar, put on the lid and shake to mix. Remove the lid and add the essential oil, re-cap and shake to blend well. I'm still working on getting the blog and my links in working order so do be patient with me. The boys are outside playing soccer they have finished their school work and chores for the day. Joseph began rowing Another Celebrated Dancing Bear this week and will begin in Zoology 1: Flying Creatures, as well as his reading & math. The older two are still working through the Civil War and will begin Human Anatomy & Physiology. They did human body four years ago, however this is a more in depth study with them keeping a notebook and experiments. We ordered some wonderful science kits for the Apologia science books from <a href="http://www.christianbook.com/">Christianbook.com</a>. They are much more complete than the ones we have ordered from Sonlight over the years and they are sorted out and bagged by lesson. Really nice for the the boys to grab and go to it. <br /><br />Tonight we will be cooking dinner together for our weekly rhythm. We are making Asparagus and Potato Tart, Green salad, and cornbread. We are moving right along. I baked millet muffins this morning and printed out note booking pages for the older boys - they are studying the Civil War and the History of Slavery. Our younger one will be learning about Saint Patrick and Saint Francis in his main lesson block.
